Sky Bistro is the signature mountaintop restaurant at the summit of Sulphur Mountain, reached by the Banff Gondola. Although dining has long been part of the Banff Gondola experience, Sky Bistro in its modern form dates to 2016, when the Banff Gondola's upper terminal underwent a major redevelopment.

The 2015–2016 Banff Gondola Transformation
The Banff Gondola closed for extensive renovations from October 2015 through April 2016. The project substantially redesigned and expanded the upper terminal, adding more visitor space, a large rooftop observation deck, improved interpretive exhibits, retail areas and new dining experiences. The renovated summit complex reopened in May 2016, marking one of the largest changes in the attraction's history.

Opening of Sky Bistro
Sky Bistro opened in 2016 as part of this new generation of summit experiences. Rather than operating simply as a convenient restaurant for gondola visitors, it was designed as a destination restaurant where the food, architecture and surrounding mountain landscape would become part of the same experience. The restaurant occupies Level 3 of the summit building, approximately 2,900 feet above the Banff townsite.

A Canadian Rocky Mountain Culinary Identity
From its beginning, Sky Bistro developed its identity around Canadian and Western Canadian ingredients. Early menus emphasized relationships with regional farms and producers, locally raised meats, seasonal produce, Canadian seafood and ingredients associated with the Rockies and Prairies. Supporting smaller farms and sourcing ingredients as locally and sustainably as practical were important parts of the restaurant's original culinary philosophy.

Dining Built Around the Mountain Views
The restaurant's location became as important as its menu. Large windows were incorporated into the dining room so guests could look across the Bow Valley and surrounding Rocky Mountain ranges while eating. The concept effectively transformed dinner into another component of the Banff Gondola sightseeing experience - visitors could ride to the summit, explore the observation decks and boardwalk, and then remain on the mountain for lunch, dinner or sunset dining.

Sky Bistro's Growing Reputation
Over the following decade, Sky Bistro developed a reputation beyond that of a typical attraction restaurant. Its combination of regional cuisine, Canadian ingredients and an unusual high-alpine location helped establish it as one of the Banff Gondola's flagship experiences. The restaurant has also received national recognition, including appearances connected with Canada's 100 Best Restaurants.

The 2026 Sky Bistro Renovation
A second important chapter arrived in 2026. Sky Bistro temporarily closed for a substantial renovation and subsequently reopened with a redesigned dining room, bar and lounge. The project added approximately 35 seats, reorganized the interior and repositioned the bar so that more guests could sit facing the surrounding mountains. Reflective design elements were also introduced to bring the mountain scenery visually deeper into the restaurant.

A New Culinary Direction
The renovation was accompanied by an updated culinary program led by Executive Chef Matthew Smith. The renewed menu continued Sky Bistro's Canadian identity while placing particular emphasis on Western Canadian landscapes and producers. Alberta beef remained important, while ingredients such as bison, haskap berries and spruce helped give dishes a stronger regional character. Canadian wines and mountain-inspired cocktails were incorporated into the broader experience.

From Summit Restaurant to Destination Experience
The history of Sky Bistro therefore closely follows the evolution of the Banff Gondola itself. What began with the redevelopment of the summit complex in 2016 has developed into a dedicated mountaintop dining destination. The 2026 renovation represents the restaurant's second major era, with greater emphasis on flexible dining, lounge seating, mountain-facing views and contemporary Western Canadian cuisine.

Today, the Banff Gondola Sky Bistro remains one of the defining features of the Banff Gondola summit experience - a restaurant created specifically around the unusual opportunity to dine high above Banff while looking across the Bow Valley and the surrounding Canadian Rockies.
